Ingredients

  • 4 burger buns
  • 2 large potatoes, boiled and mashed
  • 1 cup mixed vegetables (peas, carrots, cauliflower), boiled and mashed
  • 2 onions, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger paste
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 1 tsp garam masala
  • 2 tbsp butter
  • Salt
  • Fresh cilantro for garnish

Instructions

  1. In a large pan, heat butter. Add cumin seeds, cooking until they begin to pop.
  2. Add chopped onions, garlic, and ginger paste, cooking until golden brown.
  3. Stir in chopped tomatoes, turmeric powder, chili powder, and garam masala. Cook until the oil separates from the masala.
  4. Add mashed potatoes and mixed vegetables, cooking until well combined and heated through.
  5. Toast the burger buns with some butter until golden brown.
  6. Serve the vegetable mash (bhaji) with the buttered buns (pav), garnished with fresh cilantro. Enjoy!
