- 4 pork loin chops
- Salt and pepper
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- Vegetable oil for frying
- 4 cups cooked rice
- 4 eggs
- 1 onion, sliced
- 1/4 cup soy sauce
- 1/4 cup mirin
- 1/4 cup dashi broth
- 2 tbsp sugar
- Green onions for garnish
Instructions
- Season pork chops with salt and pepper. Dredge in flour, dip in beaten eggs, and coat with panko breadcrumbs.
- Heat vegetable oil in a pan and fry the pork chops until golden brown and crispy.
- In a separate pan, bring soy sauce, mirin, dashi broth, and sugar to a simmer. Add sliced onion and cook until tender.
- Slice pork cutlets and place on top of the onions. Pour beaten eggs over and cover until the eggs are set.
- Serve over bowls of cooked rice, garnished with green onions. Enjoy!
