Ingredients

  • 4 pork loin chops
  • Salt and pepper
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying
  • 4 cups cooked rice
  • 4 eggs
  • 1 onion, sliced
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup dashi broth
  • 2 tbsp sugar
  • Green onions for garnish

Instructions

  1. Season pork chops with salt and pepper. Dredge in flour, dip in beaten eggs, and coat with panko breadcrumbs.
  2. Heat vegetable oil in a pan and fry the pork chops until golden brown and crispy.
  3. In a separate pan, bring soy sauce, mirin, dashi broth, and sugar to a simmer. Add sliced onion and cook until tender.
  4. Slice pork cutlets and place on top of the onions. Pour beaten eggs over and cover until the eggs are set.
  5. Serve over bowls of cooked rice, garnished with green onions. Enjoy!
