Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs, separated
  • 2 cups buttermilk
  • 4 tbsp melted butter
  • Powdered sugar, for dusting
  • Jam or syrup, for serving

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk the egg yolks and buttermilk until well combined. Add the melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.
  5. Heat an Æbleskiver pan over medium heat and lightly grease each well with butter or oil.
  6. Fill each well about 3/4 full with batter. Cook until the edges start to set, then use a skewer or fork to turn the Æbleskiver and cook until golden brown on all sides.
  7. Dust with powdered sugar and serve with jam or syrup. Enjoy!
