Ingredients

  • 2 chicken breasts
  • 1 cup jasmine rice
  • 1 1/4 cups water
  • 1/2 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp grated ginger
  • 1 garlic clove, minced
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Cook the jasmine rice according to the package instructions and keep warm.
  2. In a small bowl, mix the soy sauce, honey, olive oil, grated ginger, and minced garlic.
  3. Marinate the chicken breasts in half of the sauce mixture for at least 20 minutes.
  4. Grill the chicken over medium heat for 6-8 minutes per side, or until cooked through. Let rest for a few minutes, then slice.
  5. In a separate pan, sauté the bell pepper and snap peas until tender-crisp.
  6. Divide the rice between two bowls. Top with sliced chicken, pineapple chunks, bell pepper, and snap peas.
  7. Drizzle with the remaining sauce and garnish with chopped cilantro and lime wedges.
  8. Serve and enjoy a taste of the tropics!
