- 1 cup jasmine rice
- 1 1/4 cups water
- 1/2 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 cup snap peas
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tsp grated ginger
- 1 garlic clove, minced
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Cook the jasmine rice according to the package instructions and keep warm.
- In a small bowl, mix the soy sauce, honey, olive oil, grated ginger, and minced garlic.
- Marinate the chicken breasts in half of the sauce mixture for at least 20 minutes.
- Grill the chicken over medium heat for 6-8 minutes per side, or until cooked through. Let rest for a few minutes, then slice.
- In a separate pan, sauté the bell pepper and snap peas until tender-crisp.
- Divide the rice between two bowls. Top with sliced chicken, pineapple chunks, bell pepper, and snap peas.
- Drizzle with the remaining sauce and garnish with chopped cilantro and lime wedges.
