Ingredients

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 celery stalk, chopped
  • 2 carrots, peeled and chopped
  • 1 can white beans, drained and rinsed
  • 1/2 lb sausage, sliced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, celery, and carrots, cooking until softened.
  2. Stir in white beans, sausage, chicken broth, diced tomatoes, and thyme. Bring to a boil.
  3. Reduce heat and simmer for 30 minutes, until flavors are melded and sausage is cooked through.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with fresh parsley.
