- 2 medium beets, peeled and grated
- 1 carrot, peeled and grated
- 1 potato, peeled and diced
- 1/2 head cabbage, shredded
- 4 cups vegetable or chicken broth
- 1 tbsp tomato paste
- 1 tbsp vinegar
- Salt and pepper to taste
- Sour cream for serving
- Fresh dill for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
- Stir in grated beets, carrot, and potato. Cook for 5 minutes, stirring occasionally.
- Add shredded cabbage, broth, tomato paste, and vinegar. Bring to a boil, then reduce heat and simmer for 30 minutes, until vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, topped with a dollop of sour cream and garnished with fresh dill.
