- 1 onion, chopped
- 2 garlic cloves, minced
- 1 lb fresh asparagus, trimmed and cut into pieces
- 3 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Lemon zest for garnish (optional)
Instructions
- Melt butter in a large pot over medium heat. Add onion and garlic, cooking until softened.
- Add asparagus and vegetable broth. Bring to a boil, then reduce heat and simmer until asparagus is tender, about 10 minutes.
- Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
- Stir in the heavy cream and season with salt and pepper to taste.
