Ingredients

  • 1 tbsp butter
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 lb fresh asparagus, trimmed and cut into pieces
  • 3 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Lemon zest for garnish (optional)

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Add asparagus and vegetable broth. Bring to a boil, then reduce heat and simmer until asparagus is tender, about 10 minutes.
  3. Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
  4. Stir in the heavy cream and season with salt and pepper to taste.
  5. Garnish with lemon zest if desired and serve hot.
