Ingredients

  • 4 medium beets, peeled and cubed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 cups arugula
  • 1/4 cup crumbled goat cheese
  • 1/4 cup walnuts, toasted
  • 2 tbsp balsamic vinaigrette

Instructions

  1. Preheat oven to 400°F (200°C). Toss beets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 30 minutes, until tender.
