- 1 lb beef or chicken, cut into chunks
- 2 cups coconut milk
- 2 tbsp massaman curry paste
- 2 potatoes, cubed
- 1 onion, sliced
- 1/4 cup peanuts
- 2 tbsp fish sauce
- 2 tbsp tamarind paste
- 1 tbsp sugar
- 1 cinnamon stick
- 2–3 cardamom pods
- Fresh cilantro for garnish
Instructions
- Heat a large pan over medium heat and add the massaman curry paste. Cook for 1-2 minutes until fragrant.
- Add half of the coconut milk and bring to a boil. Add the meat and cook until done.
- Add the remaining coconut milk, potatoes, onion, cinnamon stick, and cardamom pods. Simmer until the potatoes are tender.
- Stir in fish sauce, tamarind paste, sugar, and peanuts. Adjust seasoning to taste.
- Serve hot, garnished with fresh cilantro. Enjoy!
