 Massaman Curry is a rich and mild Thai curry with influences from Indian cuisine. It features tender chunks of meat, potatoes, and peanuts in a creamy, flavorful sauce.

Ingredients

  • 1 lb beef or chicken, cut into chunks
  • 2 cups coconut milk
  • 2 tbsp massaman curry paste
  • 2 potatoes, cubed
  • 1 onion, sliced
  • 1/4 cup peanuts
  • 2 tbsp fish sauce
  • 2 tbsp tamarind paste
  • 1 tbsp sugar
  • 1 cinnamon stick
  • 23 cardamom pods
  • Fresh cilantro for garnish

Instructions

  1. Heat a large pan over medium heat and add the massaman curry paste. Cook for 1-2 minutes until fragrant.
  2. Add half of the coconut milk and bring to a boil. Add the meat and cook until done.
  3. Add the remaining coconut milk, potatoes, onion, cinnamon stick, and cardamom pods. Simmer until the potatoes are tender.
  4. Stir in fish sauce, tamarind paste, sugar, and peanuts. Adjust seasoning to taste.
  5. Serve hot, garnished with fresh cilantro. Enjoy!
