  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups broccoli florets
  • 3 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/2 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Add broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.
  3. Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
  4. Stir in the heavy cream and nutmeg. Season with salt and pepper to taste.
  5. Heat through and serve hot.
