- 2 garlic cloves, minced
- 1 head cauliflower, cut into florets
- 3 cups vegetable broth
- 1/2 cup heavy cream
- 1/4 tsp ground nutmeg
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
- Add cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer until cauliflower is tender, about 15 minutes.
- Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
