- 1 whole chicken, cut into pieces
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 garlic cloves, minced
- 1 bay leaf
- 6 cups water
- 1 cup egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, combine the chicken pieces, onion, carrots, celery, garlic, bay leaf, and water. Bring to a boil.
- Reduce heat and simmer for about 1 hour, skimming off any foam that rises to the surface.
- Remove the chicken pieces from the pot. Shred the meat from the bones and return it to the pot. Discard the bones.
- Add the egg noodles and cook until tender, about 5 minutes.
- Season with salt and pepper to taste. Garnish with fresh parsley before serving.
