Ingredients

  • 1 whole chicken, cut into pieces
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 garlic cloves, minced
  • 1 bay leaf
  • 6 cups water
  • 1 cup egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, combine the chicken pieces, onion, carrots, celery, garlic, bay leaf, and water. Bring to a boil.
  2. Reduce heat and simmer for about 1 hour, skimming off any foam that rises to the surface.
  3. Remove the chicken pieces from the pot. Shred the meat from the bones and return it to the pot. Discard the bones.
  4. Add the egg noodles and cook until tender, about 5 minutes.
  5. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
