- 1 whole chicken, cut into pieces
- 200 g bacon, diced
- 2 cups red wine
- 1 cup chicken broth
- 2 onions, chopped
- 3 carrots, sliced
- 2 cloves garlic, minced
- 2 tbsp flour
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 1 bouquet garni (thyme, bay leaf, parsley)
- Salt and pepper
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the bacon and cook until crispy. Remove and set aside.
- In the same pot, add the chicken pieces and brown on all sides. Remove and set aside.
- Add onions, carrots, and garlic to the pot. Cook until softened.
- Stir in the flour and tomato paste, cook for 1 minute.
- Pour in the red wine and chicken broth, stirring to combine.
- Return the chicken and bacon to the pot. Add the bouquet garni.
- Bring to a boil, then reduce heat and simmer for 1.5 hours, or until chicken is tender.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving. Enjoy!
