Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 1 1/2 cups egg noodles (or any pasta of your choice)
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened, about 5 minutes.
  2. Add carrots and celery, and cook for another 5 minutes.
  3. Pour in chicken broth and add bay leaf and dried thyme. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes, until vegetables are tender.
  5. Add cooked chicken and egg noodles. Simmer until noodles are cooked, about 8-10 minutes.
  6. Season with salt and pepper. Remove bay leaf before serving.
  7. Garnish with fresh parsley if desired. Enjoy!
