- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded or diced
- 1 1/2 cups egg noodles (or any pasta of your choice)
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened, about 5 minutes.
- Add carrots and celery, and cook for another 5 minutes.
- Pour in chicken broth and add bay leaf and dried thyme. Bring to a boil.
- Reduce heat and simmer for 15 minutes, until vegetables are tender.
- Add cooked chicken and egg noodles. Simmer until noodles are cooked, about 8-10 minutes.
- Season with salt and pepper. Remove bay leaf before serving.
- Garnish with fresh parsley if desired. Enjoy!
