- 4 chicken breasts, pounded thin
- 1 cup breadcrumbs
- 1/2 cup Parmesan cheese, grated
- 2 eggs
- 1 cup marinara sauce
- 1 cup mozzarella cheese, shredded
- 1/4 cup flour
- 1/4 cup olive oil
- Salt and pepper
- Fresh basil for garnish
Instructions
- Preheat the oven to 190°C (375°F).
- In a bowl, mix breadcrumbs and grated Parmesan cheese. In another bowl, beat the eggs. Place the flour in a third bowl.
- Dredge each chicken breast in flour, dip in beaten eggs, and coat with the breadcrumb mixture.
- In a large pan, heat olive oil over medium heat. Fry the chicken breasts until golden and crispy. Remove and set aside.
- In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the chicken breasts in the dish and top with remaining marinara sauce and shredded mozzarella cheese.
- Bake for 20 minutes until the cheese is melted and bubbly.
- Garnish with fresh basil before serving. Enjoy!
