Ingredients

  • 4 slices bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups fresh or frozen corn kernels
  • 2 cups potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp all-purpose flour
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Fresh chives for garnish (optional)

Instructions

  1. In a large pot, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving drippings in the pot.
  2. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in potatoes, corn, and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. In a small bowl, mix flour with a bit of broth to make a slurry. Stir into the soup and cook for an additional 5 minutes to thicken.
  5. Stir in heavy cream, thyme, and season with salt and pepper.
  6. Garnish with crispy bacon and fresh chives if desired. Enjoy!
