- 4 slices bacon, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups fresh or frozen corn kernels
- 2 cups potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tbsp all-purpose flour
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Fresh chives for garnish (optional)
Instructions
- In a large pot, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving drippings in the pot.
- Add onion and garlic to the pot and cook until softened, about 5 minutes.
- Stir in potatoes, corn, and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- In a small bowl, mix flour with a bit of broth to make a slurry. Stir into the soup and cook for an additional 5 minutes to thicken.
- Stir in heavy cream, thyme, and season with salt and pepper.
- Garnish with crispy bacon and fresh chives if desired. Enjoy!
