- 1 bell pepper, chopped
- 4 cups fresh or frozen corn kernels
- 3 cups vegetable or chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh chives for garnish
Instructions
- Melt butter in a large pot over medium heat. Add onion and bell pepper, cooking until softened.
- Stir in corn kernels and broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
- Stir in the heavy cream and season with salt and pepper to taste.
- Garnish with fresh chives before serving.
