- 1 lb beef stew meat, cubed
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 carrots, peeled and chopped
- 2 potatoes, peeled and diced
- 1 cup green beans, trimmed and cut into pieces
- 1 cup diced tomatoes (canned or fresh)
- 1 cup beef broth
- 1 cup water
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
- In the same pot, add the onion and garlic. Cook until softened, about 5 minutes.
- Add the carrots and potatoes, and cook for another 5 minutes.
- Return the beef to the pot and add the tomatoes, beef broth, water, thyme, rosemary, and bay leaf. Bring to a boil.
- Reduce the heat to low, cover, and simmer for about 1 hour, or until the meat is tender.
- Add the green beans and kidney beans, and cook for an additional 15-20 minutes, until the vegetables are tender.
- Season with salt and pepper to taste. Remove the bay leaf before serving.
- Garnish with chopped parsley and serve hot. Enjoy!
