- 8 small tortillas
- 2 cups cooked and shredded chicken (or beef)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup enchilada sauce
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 cup cooked black beans (optional)
- 1 cup sour cream (for serving)
- Fresh cilantro (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, sauté chopped onion and bell pepper until softened.
- In a bowl, mix shredded chicken with sautéed onion, bell pepper, and black beans (if using).
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the chicken mixture and roll tightly.
- Place rolled tortillas seam-side down in the baking dish.
- Pour remaining enchilada sauce over the top and sprinkle with shredded cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Garnish with fresh cilantro and serve with sour cream.
