- 4 large onions, thinly sliced
- 50 g butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp flour
- 1.5 liters beef broth
- 250 ml white wine
- 1 baguette, sliced
- 200 g Gruyère cheese, grated
- Salt and pepper
- Fresh thyme for garnish
Instructions
- In a large pot, melt butter with olive oil over medium heat. Add onions and cook, stirring frequently, until caramelized, about 25 minutes.
- Add garlic and cook for another minute. Stir in the flour and cook for 2 minutes.
- Pour in the white wine, scraping up any browned bits from the bottom of the pot.
- Add the beef broth and bring to a boil. Reduce heat and simmer for 20 minutes. Season with salt and pepper.
- Preheat the oven to 200°C (400°F). Place baguette slices on a baking sheet and toast until golden.
- Ladle soup into ovenproof bowls. Top each with toasted baguette slices and a generous amount of grated Gruyère cheese.
- Place the bowls under the broiler until the cheese is melted and bubbly.
- Garnish with fresh thyme before serving. Enjoy!
