Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 lb beef stew meat, cubed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups potatoes, peeled and cubed
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp paprika
  • 1 tsp caraway seeds
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Add the beef cubes and cook until browned on all sides.
  3. Stir in the bell peppers, potatoes, beef broth, diced tomatoes, paprika, caraway seeds, and cayenne pepper.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the beef and potatoes are tender.
  5. Season with salt and pepper to taste. Serve hot.
