Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 lb beef stew meat, cubed
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups potatoes, peeled and cubed
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp paprika
- 1 tsp caraway seeds
- 1/2 tsp cayenne pepper (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
- Add the beef cubes and cook until browned on all sides.
- Stir in the bell peppers, potatoes, beef broth, diced tomatoes, paprika, caraway seeds, and cayenne pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes, or until the beef and potatoes are tender.
