- 1 liter chicken broth
- 2 chicken breasts
- 2 eggs
- 1/4 cup lemon juice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper
- Fresh dill for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until softened.
- Add the chicken broth and bring to a boil. Add the chicken breasts and cook until fully cooked. Remove the chicken and shred it.
- Add the rice to the pot and cook until tender.
- In a bowl, whisk together eggs and lemon juice. Slowly add a ladle of hot broth to the egg mixture, whisking constantly.
- Stir the egg mixture back into the pot, cooking over low heat until the soup thickens slightly. Do not boil.
- Return the shredded chicken to the pot and season with salt and pepper.
