Ingredients

  • 1 cup rice
  • 1 liter chicken broth
  • 2 chicken breasts
  • 2 eggs
  • 1/4 cup lemon juice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper
  • Fresh dill for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until softened.
  2. Add the chicken broth and bring to a boil. Add the chicken breasts and cook until fully cooked. Remove the chicken and shred it.
  3. Add the rice to the pot and cook until tender.
  4. In a bowl, whisk together eggs and lemon juice. Slowly add a ladle of hot broth to the egg mixture, whisking constantly.
  5. Stir the egg mixture back into the pot, cooking over low heat until the soup thickens slightly. Do not boil.
  6. Return the shredded chicken to the pot and season with salt and pepper.
  7. Garnish with fresh dill before serving. Enjoy!
