Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups broccoli florets
  • 1 cup green peas (fresh or frozen)
  • 2 cups spinach leaves
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Add broccoli, green peas, and vegetable broth. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 15 minutes.
  3. Stir in spinach leaves and cook for another 2 minutes.
  4. Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
  5. Stir in the heavy cream and season with salt and pepper to taste. Serve hot.
