- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 cups broccoli florets
- 1 cup green peas (fresh or frozen)
- 2 cups spinach leaves
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
- Add broccoli, green peas, and vegetable broth. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 15 minutes.
- Stir in spinach leaves and cook for another 2 minutes.
- Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
- Stir in the heavy cream and season with salt and pepper to taste. Serve hot.
