- 2 salmon fillets
- 1 cup cooked brown rice
- 1/2 cup pineapple chunks
- 1/2 avocado, sliced
- 1/2 red bell pepper, sliced
- 1/2 cup edamame, cooked
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp grated ginger
- 1 green onion, chopped
- 1 tbsp sesame seeds
Instructions
- Preheat the grill or oven to medium-high heat. Brush the salmon fillets with olive oil.
- In a small bowl, mix the soy sauce, honey, and grated ginger. Brush the mixture over the salmon.
- Grill or bake the salmon for 4-5 minutes per side, or until cooked through.
- Divide the cooked brown rice between two bowls. Top with salmon, pineapple chunks, avocado, red bell pepper, and edamame.
- Garnish with chopped green onion and sesame seeds.
- Serve warm and enjoy a taste of the islands!
