Ingredients

  • 500 g fish heads and bones
  • 2 carrots, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/2 cup white wine
  • 400 g canned tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper

Instructions

  1. In a pot, heat olive oil and cook onions, garlic, and carrots until softened.
  2. Add fish heads and bones, cooking for 5 minutes. Pour in white wine and simmer for 5 minutes.
  3. Stir in tomatoes, thyme, oregano, salt, and pepper. Simmer for 1 hour.
  4. Strain soup to remove bones and serve. Enjoy!
