Ingredients

  • 1 kg lamb shoulder, cut into chunks
  • 4 cloves garlic, minced
  • 2 lemons, juiced
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • 4 potatoes, cut into chunks
  • 1 cup cherry tomatoes
  • 1/2 cup white wine
  • Salt and pepper

Instructions

  1. Preheat oven to 160°C (325°F). In a bowl, mix garlic, lemon juice, olive oil, oregano, salt, and pepper.
  2. Toss lamb with the mixture and marinate for at least 2 hours.
  3. Place lamb and potatoes in a baking dish. Scatter cherry tomatoes over the top and pour white wine over everything.
  4. Cover with foil and bake for 2.5 to 3 hours until lamb is tender. Enjoy!
