- 1 kg lamb shoulder, cut into chunks
- 4 cloves garlic, minced
- 2 lemons, juiced
- 1/4 cup olive oil
- 1 tsp dried oregano
- 4 potatoes, cut into chunks
- 1 cup cherry tomatoes
- 1/2 cup white wine
- Salt and pepper
Instructions
- Preheat oven to 160°C (325°F). In a bowl, mix garlic, lemon juice, olive oil, oregano, salt, and pepper.
- Toss lamb with the mixture and marinate for at least 2 hours.
- Place lamb and potatoes in a baking dish. Scatter cherry tomatoes over the top and pour white wine over everything.
- Cover with foil and bake for 2.5 to 3 hours until lamb is tender. Enjoy!
