Kolokithokeftedes are Greek zucchini fritters packed with fresh herbs and feta cheese. They’re crispy on the outside and tender on the inside, making them a perfect appetizer or side dish.

Ingredients

  • 2 cups grated zucchini
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh dill, chopped
  • 1 egg
  • 1/2 cup all-purpose flour
  • Salt and pepper
  • Vegetable oil, for frying

Instructions

  1. Squeeze excess moisture from the grated zucchini.
  2. In a bowl, mix zucchini, feta cheese, mint, dill, egg, flour, salt, and pepper until combined.
  3. Shape mixture into small patties.
  4. Heat oil in a pan over medium heat. Fry patties until golden brown on both sides.
  5. Drain on paper towels and serve warm. Enjoy!
