Lobster Thermidor is a sophisticated dish made with lobster meat that’s been removed from the shell and cooked in a creamy mixture of white wine, Dijon mustard, egg yolks, and Parmesan cheese. The mixture is then returned to the lobster shell, topped with more cheese, and baked until golden brown. It’s named after the French theatrical play “Thermidor” and showcases a beautiful balance of flavors with a rich, creamy texture.

Ingredients

  • 2 whole lobsters
  • 2 tbsp butter
  • 1 shallot, finely chopped
  • 1 cup white wine
  • 1 cup heavy cream
  • 2 tbsp Dijon mustard
  • 2 egg yolks
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup breadcrumbs
  • 2 tbsp melted butter (for breadcrumbs)

Instructions

  1. Prepare Lobsters:

    • Bring a large pot of salted water to a boil. Add lobsters and cook for 8-10 minutes until bright red and cooked through.
    • Remove lobsters from the pot and let them cool. Once cool enough to handle, remove the lobster meat from the shells, being careful not to damage the shells. Chop the lobster meat into bite-sized pieces.
  2. Make the Sauce:

    • In a skillet, melt 2 tbsp of butter over medium heat. Add the finely chopped shallot and cook until softened and translucent.
    • Pour in the white wine and bring to a simmer. Cook until the wine is reduced by half.
    • Stir in the heavy cream and Dijon mustard. Simmer until the sauce thickens slightly.
    • Remove from heat and whisk in the egg yolks until the sauce is smooth and creamy.
    • Add the chopped lobster meat to the sauce and mix well. Season with salt and black pepper to taste.
  3. Assemble:

    • Preheat your oven to 375°F (190°C).
    • Spoon the lobster mixture back into the lobster shells. Place the filled shells in a baking dish.
    • In a small bowl, mix the breadcrumbs with melted butter and sprinkle evenly over the lobster mixture.
    • Top with additional grated Parmesan cheese.
  4. Bake and Serve:

    • Bake in the preheated oven for 10-15 minutes, or until the top is golden brown and bubbly.
    • Garnish with chopped fresh parsley before serving.
