Ingredients

  • 2 tbsp butter
  • 1 onion, chopped
  • 3 cups mushrooms, sliced
  • 2 garlic cloves, minced
  • 3 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and cook until translucent.
  2. Add mushrooms and garlic, cooking until mushrooms are tender and have released their juices.
  3. Stir in flour and cook for 1-2 minutes, until the flour is lightly toasted.
  4. Gradually add the broth, stirring constantly. Bring to a simmer and cook for 10 minutes.
  5. Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Heat through and garnish with fresh thyme if desired.
