- 1 onion, chopped
- 3 cups mushrooms, sliced
- 2 garlic cloves, minced
- 3 cups vegetable or chicken broth
- 1/2 cup heavy cream
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Melt butter in a large pot over medium heat. Add onion and cook until translucent.
- Add mushrooms and garlic, cooking until mushrooms are tender and have released their juices.
- Stir in flour and cook for 1-2 minutes, until the flour is lightly toasted.
- Gradually add the broth, stirring constantly. Bring to a simmer and cook for 10 minutes.
- Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
- Stir in the heavy cream and season with salt and pepper.
- Heat through and garnish with fresh thyme if desired.
