- 8 oz rice noodles
- 2 tbsp vegetable oil
- 1 garlic clove, minced
- 1 chicken breast, sliced thinly (or tofu for vegetarian)
- 2 eggs, lightly beaten
- 1 cup bean sprouts
- 1/2 cup sliced green onions
- 1/4 cup chopped peanuts
- Lime wedges, for serving
Sauce:
- 3 tbsp fish sauce (or soy sauce for vegetarian)
- 1 tbsp tamarind paste
- 2 tbsp sugar
- 1 tbsp rice vinegar
Instructions
- Soak the rice noodles in warm water for 20 minutes, then drain and set aside.
- Heat the oil in a large pan or wok over medium-high heat. Add garlic and stir-fry until fragrant.
- Add the chicken (or tofu) and cook until done. Push to one side of the pan.
- Pour the beaten eggs into the pan and scramble. Mix with the chicken.
- Add the soaked noodles and the sauce ingredients. Stir-fry until the noodles are soft and everything is well combined.
- Toss in the bean sprouts and green onions, and cook for another 1-2 minutes.
- Serve hot, garnished with chopped peanuts and lime wedges. Enjoy!
