Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • Sour cream for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce potatoes with a fork and bake for 40 minutes.
  3. Cut potatoes in half and scoop out the flesh, leaving a small rim of potato.
  4. Brush the potato skins with oil and bake for 10 minutes until crisp.
  5. Sprinkle with cheese and bacon, then bake for an additional 5 minutes until cheese is melted.
  6. Garnish with green onions and serve with sour cream. Enjoy!
