- 4 slices bacon, chopped
- 1 onion, chopped
- 3 cups potatoes, peeled and diced
- 3 cups chicken or vegetable broth
- 1 cup heavy cream
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- In a large pot, cook bacon over medium heat until crisp. Remove bacon and set aside.
- Add onion to the pot and cook until softened.
- Add potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
- Use an immersion blender to partially blend the soup, leaving some chunks of potato. Alternatively, blend in batches in a regular blender.
- Stir in the heavy cream, thyme, and season with salt and pepper.
- Heat through and garnish with crispy bacon and chopped chives before serving.
