Ingredients

  • 4 slices bacon, chopped
  • 1 onion, chopped
  • 3 cups potatoes, peeled and diced
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. In a large pot, cook bacon over medium heat until crisp. Remove bacon and set aside.
  2. Add onion to the pot and cook until softened.
  3. Add potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. Use an immersion blender to partially blend the soup, leaving some chunks of potato. Alternatively, blend in batches in a regular blender.
  5. Stir in the heavy cream, thyme, and season with salt and pepper.
  6. Heat through and garnish with crispy bacon and chopped chives before serving.
