- 1 kg white fish fillets (such as cod or haddock)
- 1/4 cup olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 400 g canned tomatoes
- 1/2 cup white wine
- 1 tsp dried oregano
- 1/4 cup fresh parsley, chopped
- Salt and pepper
Instructions
- Preheat oven to 180°C (350°F). Grease a baking dish.
- Heat olive oil in a pan and cook onion and garlic until softened.
- Stir in tomatoes, white wine, oregano, salt, and pepper. Simmer for 10 minutes.
- Place fish fillets in the baking dish and pour tomato sauce over them.
- Bake for 20-25 minutes until fish is cooked through. Garnish with fresh parsley. Enjoy!
