Ingredients

  • 1 kg white fish fillets (such as cod or haddock)
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 400 g canned tomatoes
  • 1/2 cup white wine
  • 1 tsp dried oregano
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper

Instructions

  1. Preheat oven to 180°C (350°F). Grease a baking dish.
  2. Heat olive oil in a pan and cook onion and garlic until softened.
  3. Stir in tomatoes, white wine, oregano, salt, and pepper. Simmer for 10 minutes.
  4. Place fish fillets in the baking dish and pour tomato sauce over them.
  5. Bake for 20-25 minutes until fish is cooked through. Garnish with fresh parsley. Enjoy!
