Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups pumpkin puree (fresh or canned)
- 3 cups chicken or vegetable broth
- 1/2 cup coconut milk
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
- Pumpkin seeds for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
- Stir in the pumpkin puree and broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in the coconut milk, ginger, and cinnamon. Season with salt and pepper.
- Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
