Ingredients
- 1000g Tomato
- 400g Zucchini
- 300g Eggplant
- 200g Red Pepper
- 200g Green Pepper
- 200g Onion
- 20ml Olive Oil
- Fresh Parsley
- Salt
- Pepper
- Basil
Instructions
- Cut the eggplant and zucchini into 1.5-2 cm thick slices, sprinkle with salt and leave for 20 minutes.
- Cut the tomatoes crosswise and scald them in hot water and cut into quarters.
- Heat the olive oil in a pan, fry the eggplant and zucchini slices briefly, set aside.
- Cut the peppers into 1.5 cm thick slices, remove the seeds, set aside.
- Fry finely chopped onion and garlic pressed through a press briefly.
- Pour tomatoes and spices, mix, cook for 15 minutes over low heat.
- Layer the slices of vegetables, and pour the whole thing with tomatoes. Sprinkle with chopped parsley. Enjoy!
