 Revithada is a comforting Greek chickpea stew cooked with tomatoes and aromatic herbs. It’s hearty, nutritious, and ideal for a satisfying meal.

Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper

Instructions

  1. Drain and rinse chickpeas. In a pot, heat olive oil and cook onion and garlic until softened.
  2. Add chickpeas, tomato sauce, thyme, oregano, salt, and pepper. Pour in enough water to cover chickpeas by about 5 cm (2 inches).
  3. Simmer for 1.5 hours until chickpeas are tender. Adjust seasoning as needed.
  4. Serve warm. Enjoy!
