- 1 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 red bell pepper, chopped
- 1 can (14 oz) coconut milk
- 4 cups chicken or seafood broth
- 1 lb shrimp, peeled and deveined
- 1 tbsp red curry paste
- 1 tbsp fish sauce
- 1 lime, juiced
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Heat vegetable oil in a large pot over medium heat. Add onion, garlic, and ginger, cooking until softened.
- Stir in red bell pepper and cook for another 2 minutes.
- Add coconut milk, broth, red curry paste, and fish sauce. Bring to a boil.
- Reduce heat and simmer for 5 minutes. Add shrimp and cook until pink and cooked through, about 3-4 minutes.
- Stir in lime juice and season with additional fish sauce if needed.
- Serve hot, garnished with fresh cilantro and lime wedges.
