Sole Meunière is a classic French dish where delicate sole fillets are pan-fried in butter and served with a simple, yet exquisite, lemon-parsley sauce. The crispy, golden fish combined with the tangy sauce offers a taste of culinary elegance.

Ingredients

  • 4 sole fillets
  • 1/2 cup all-purpose flour
  • 4 tbsp butter
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper

Instructions

  • Dredge sole fillets in flour, shaking off excess.
  • In a large skillet, heat butter and olive oil over medium heat. Add fillets and cook for 2-3 minutes per side, until golden and cooked through.
  • Remove fillets and add lemon juice to the skillet, scraping up any browned bits. Stir in chopped parsley.
  • Pour the sauce over the fillets and serve immediately. Enjoy!
