Ingredients

  • 400 g chickpeas, drained and rinsed
  • 200 g fresh spinach
  • 1 onion
  • 2 cloves garlic
  • 400 g diced tomatoes
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes
  • Salt and pepper
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic and sauté until translucent.
  2. Add ground cumin, ground coriander, and chili flakes. Cook for 1-2 minutes until fragrant.
  3. Stir in the diced tomatoes and chickpeas. Simmer for 15 minutes.
  4. Add the fresh spinach and cook until wilted.
  5. Season with salt and pepper to taste.
  6. Garnish with freshly chopped cilantro before serving. Enjoy!
