Ingredients
- 4 large bell peppers
- 200 g fresh spinach
- 150 g feta cheese
- 1 onion
- 2 cloves garlic
- 1 cup cooked quinoa
- 2 tbsp olive oil
- Salt and pepper
- Fresh dill for garnish
Instructions
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds.
- In a pan, heat olive oil over medium heat. Add chopped onion and minced garlic, and cook until translucent.
- Add fresh spinach and cook until wilted.
- In a bowl, combine the cooked quinoa, spinach mixture, and crumbled feta cheese. Season with salt and pepper.
- Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
- Bake for 25-30 minutes until the peppers are tender.
- Garnish with freshly chopped dill before serving. Enjoy!
