- 4 large potatoes, peeled and cut into chunks
- 4 carrots, peeled and cut into chunks
- 1 onion, quartered
- 2 tbsp olive oil
- Salt and pepper
- 1 cup beef stock
- Yorkshire pudding mix (store-bought or homemade)
Instructions
- Preheat oven to 375°F (190°C).
- Season the meat with salt and pepper and rub with olive oil. Place in a roasting pan.
- Arrange potatoes, carrots, and onions around the meat.
- Roast in the oven for 1.5 hours or until meat reaches desired doneness.
- Make Yorkshire pudding according to package instructions or your favorite recipe.
