- 400 g black beans, drained and rinsed
- 1 onion
- 2 cloves garlic
- 400 g diced tomatoes
- 1 red bell pepper
- 2 tbsp chili powder
- 1 tsp cumin
- 2 tbsp olive oil
- Salt and pepper
- Fresh cilantro for garnish
Instructions
- Peel and dice the sweet potatoes and bell pepper.
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and cook until translucent.
- Add the diced sweet potatoes and bell pepper. Cook for 5-7 minutes.
- Stir in the chili powder and cumin, cooking for 1-2 minutes until fragrant.

- Cook for 25-30 minutes until the sweet potatoes are tender.
