Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups sweet potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Add sweet potatoes and broth. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
  3. Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a regular blender.
  4. Stir in the heavy cream and ground cinnamon. Season with salt and pepper to taste.
  5. Serve hot, garnished with fresh thyme.
