Ingredients
- 300g Sweet Potatoes
- 100g Arugula
- 100g Pomegranate
- 70g Feta Cheese
- 30ml Canola Oil
- 30ml Olive Oil
- Salt
- Pepper
- Herbs de Provence
- Sugar
- Balsamic Vinegar
Instructions
- Preheat the oven to 180 degrees C. Line a baking tray with baking paper.
- Wash and peel potatoes. Cut them into thin slices (about 3-4mm). Place the oil and herbs de Provence in a bowl, add the chopped sweet potatoes and mix them thoroughly in the oil.
- Place the sliced sweet potatoes on a baking sheet and bake them for about 15 minutes.
- Cut feta cheese into small cubes.
- Remove the seeds from the pomegranate.
- Prepare the dressing: mix olive oil with a teaspoon of vinegar, a little sugar, salt and pepper.
- Place the arugula in a bowl, add the baked sweet potatoes, pomegranate seeds and a cube of feta cheese.
- Pour the dressing over everything and mix gently. Enjoy!
