Ingredients

  • 300g Sweet Potatoes
  • 100g Arugula
  • 100g Pomegranate
  • 70g Feta Cheese
  • 30ml Canola Oil
  • 30ml Olive Oil
  • Salt
  • Pepper
  • Herbs de Provence
  • Sugar
  • Balsamic Vinegar

Instructions

  1. Preheat the oven to 180 degrees C. Line a baking tray with baking paper.
  2. Wash and peel potatoes. Cut them into thin slices (about 3-4mm). Place the oil and herbs de Provence in a bowl, add the chopped sweet potatoes and mix them thoroughly in the oil.
  3. Place the sliced ​​sweet potatoes on a baking sheet and bake them for about 15 minutes.
  4. Cut feta cheese into small cubes.
  5. Remove the seeds from the pomegranate.
  6. Prepare the dressing: mix olive oil with a teaspoon of vinegar, a little sugar, salt and pepper.
  7. Place the arugula in a bowl, add the baked sweet potatoes, pomegranate seeds and a cube of feta cheese.
  8. Pour the dressing over everything and mix gently. Enjoy!
