Ingredients

  • 1 cup bulgur wheat
  • 1 cup tomatoes, diced
  • 1 cucumber, diced

  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare bulgur wheat according to package instructions. Allow to cool.
  2. In a large bowl, combine cooked bulgur wheat, tomatoes, cucumber, and parsley.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. Toss the salad with the dressing until well mixed. Enjoy!
