- 1 cup bulgur wheat
- 1 cup tomatoes, diced
- 1 cucumber, diced
- 1 cup fresh parsley, chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare bulgur wheat according to package instructions. Allow to cool.
- In a large bowl, combine cooked bulgur wheat, tomatoes, cucumber, and parsley.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Toss the salad with the dressing until well mixed. Enjoy!
