Ingredients

  • 1 lb chicken breast, sliced thinly
  • 4 cups chicken broth
  • 2 cups coconut milk
  • 2 stalks lemongrass, cut into 2-inch pieces
  • 5 slices galangal
  • 5 kaffir lime leaves, torn
  • 1 cup mushrooms, sliced
  • 23 Thai chilies, crushed
  • 3 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp sugar
  • Fresh cilantro for garnish

Instructions

  1. Bring the chicken broth to a boil in a large pot.
  2. Add lemongrass, galangal, kaffir lime leaves, and Thai chilies. Simmer for 5-10 minutes to infuse the flavors.
  3. Add chicken and mushrooms, and cook until the chicken is done.
  4. Stir in coconut milk, fish sauce, lime juice, and sugar. Adjust seasoning to taste.
  5. Serve hot, garnished with fresh cilantro. Enjoy!
