- 1 lb chicken breast, sliced thinly
- 4 cups chicken broth
- 2 cups coconut milk
- 2 stalks lemongrass, cut into 2-inch pieces
- 5 slices galangal
- 5 kaffir lime leaves, torn
- 1 cup mushrooms, sliced
- 2–3 Thai chilies, crushed
- 3 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp sugar
- Fresh cilantro for garnish
Instructions
- Bring the chicken broth to a boil in a large pot.
- Add lemongrass, galangal, kaffir lime leaves, and Thai chilies. Simmer for 5-10 minutes to infuse the flavors.
- Add chicken and mushrooms, and cook until the chicken is done.
- Stir in coconut milk, fish sauce, lime juice, and sugar. Adjust seasoning to taste.
- Serve hot, garnished with fresh cilantro. Enjoy!
