- 4 cups cooked jasmine rice
- 2 tbsp vegetable oil
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, lightly beaten
- 1 cup shrimp, chicken, or tofu
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp oyster sauce
- Lime wedges and cilantro for garnish
Instructions
- Heat oil in a large pan or wok over medium-high heat. Add garlic and onion, and stir-fry until fragrant.
- Add mixed vegetables and protein, and cook until done.
- Push everything to one side of the pan and pour in the beaten eggs. Scramble the eggs and then mix everything together.
- Add the cooked rice, soy sauce, fish sauce, and oyster sauce. Stir-fry until well combined and heated through.
- Serve hot, garnished with lime wedges and cilantro. Enjoy!
