Khao Pad is a simple yet delicious Thai fried rice dish made with jasmine rice, vegetables, and your choice of protein. It’s a versatile dish that’s perfect for using up leftovers.

Ingredients

  • 4 cups cooked jasmine rice
  • 2 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, lightly beaten
  • 1 cup shrimp, chicken, or tofu
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • Lime wedges and cilantro for garnish

Instructions

  1. Heat oil in a large pan or wok over medium-high heat. Add garlic and onion, and stir-fry until fragrant.
  2. Add mixed vegetables and protein, and cook until done.
  3. Push everything to one side of the pan and pour in the beaten eggs. Scramble the eggs and then mix everything together.
  4. Add the cooked rice, soy sauce, fish sauce, and oyster sauce. Stir-fry until well combined and heated through.
  5. Serve hot, garnished with lime wedges and cilantro. Enjoy!
