- 2 oz glass noodles
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb ground pork
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced celery
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
Dressing:
- 3 tbsp fish sauce
- 3 tbsp lime juice
- 1 tbsp sugar
- 2–3 Thai chilies, sliced
Instructions
- Soak the glass noodles in warm water for 10 minutes, then drain and set aside.
- Cook the shrimp and ground pork in separate pans until done.
- In a large bowl, combine glass noodles, cooked shrimp, ground pork, cherry tomatoes, celery, cilantro, and green onions.
- In a separate bowl, mix fish sauce, lime juice, sugar, and Thai chilies to make the dressing.
- Toss the salad with the dressing.
- Serve immediately. Enjoy!
