Thai Glass Noodle Salad is a light and refreshing Thai salad made with glass noodles, shrimp, ground pork, and fresh vegetables. It’s tossed in a tangy lime dressing for a burst of flavor.

Ingredients

  • 2 oz glass noodles
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb ground pork
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced celery
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions

Dressing:

  • 3 tbsp fish sauce
  • 3 tbsp lime juice
  • 1 tbsp sugar
  • 23 Thai chilies, sliced

Instructions

  1. Soak the glass noodles in warm water for 10 minutes, then drain and set aside.
  2. Cook the shrimp and ground pork in separate pans until done.
  3. In a large bowl, combine glass noodles, cooked shrimp, ground pork, cherry tomatoes, celery, cilantro, and green onions.
  4. In a separate bowl, mix fish sauce, lime juice, sugar, and Thai chilies to make the dressing.
  5. Toss the salad with the dressing.
  6. Serve immediately. Enjoy!
