Ingredients

  • 400 ml coconut milk
  • 200 g tofu or chicken breast
  • 1 green bell pepper
  • 1 red bell pepper
  • 100 g snap peas
  • 1 zucchini
  • 2 tbsp green curry paste
  • 1 tbsp soy sauce
  • 1 lime
  • Fresh basil leaves
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Add the green curry paste and cook for 2 minutes until fragrant.
  2. Add the tofu or chicken breast, cut into cubes, and cook until browned.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the sliced bell peppers, snap peas, and zucchini. Cook for 10 minutes until the vegetables are tender.
  5. Stir in the soy sauce and squeeze in the lime juice.
  6. Season with salt to taste.
  7. Garnish with fresh basil leaves before serving. Enjoy!
