Ingredients

  • 1 lb pumpkin, peeled and cubed
  • 2 cups coconut milk
  • 2 tbsp red curry paste
  • 1 cup bell peppers, sliced
  • 1 cup green beans, cut into 1-inch pieces
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • Fresh basil for garnish

Instructions

  1. Heat a large pan over medium heat and add the red curry paste. Cook for 1-2 minutes until fragrant.
  2. Add half of the coconut milk and bring to a boil. Add the pumpkin and cook until tender.
  3. Add the remaining coconut milk, bell peppers, and green beans. Simmer until the vegetables are tender.
  4. Stir in fish sauce and sugar. Adjust seasoning to taste.
  5. Serve hot, garnished with fresh basil. Enjoy!
